Authentic Pasta Fagioli

This is not your typical American Pasta Fagioli soup recipe, rather a more authentic Italian version. You may have even noticed its not even soup, that's right, authentic Pasta Fagioli isn't actually soup but more of a simple yet delicious pasta dish!





Ingredients

  • 28oz Can of crushed tomatoes

  • 16oz pasta (I used Trapanesi)

  • 2 cans Cannellini Beans

  • 2 tsp extra virgin olive oil

  • 2 cloves of garlic

  • chili powder



Directions


  1. bring a large pot of water to a boil

  2. dice the garlic, drain and rinse beans

  3. Heat two tsp of oil in a large saucepan over medium-low heat and lightly brown garlic. Add beans and crushed tomatoes, along with the juices, to the pan. Salt and pepper to taste

  4. Bring the sauce to a simmer partially covered, allow to cook while you boil the pasta.

  5. Salt the boiling water and add your pasta. Cook as directed or until al dente or to your taste. Drain and return the pasta to the pot.

  6. Add the bean sauce into the pasta.

  7. Stir together over medium heat until the sauce completely coats the pasta. If there's excess moisture, turn up the heat and stir until it thickens.

  8. Top with a sprinkle of chili powder.
